Dashing Through The Snow


While we were in Colorado on our winter getaway, I made quite the menu of soups and warm meals to keep my family feeling cozy and healthy. We also had some of our best friends come up to visit us and I knew I wanted to make a few special things.

We are surrounded by pine trees donning snow and mountain peaks…which meant is is c-o-l-d. Since we would be feeding four adults and four kids, I wanted to find some classic, no-nonsense meals that they would love.

For lunch I wanted to prepare corn chowder… what a perfect meal for kiddos. This was a stick to your ribs, delicious meal that was a cinch to prepare. I doctored it up a bit to meet my healthy standards. Make this for a family gathering this winter, you won’t regret it.

Corn Chowder

1 large bag of frozen corn (or a few cans of corn)

1 rotisserie chicken (regular flavor)

1 onion

2 cloves of garlic

4 stalks of celery

2 carrots

1 carton of chicken bone broth

Butter or ghee or olive oil

Saute your onion, add in your garlic, add in chopped celery and carrot. Deglaze the pan with chicken stock. Add in corn, bring to a boil then return heat to low and simmer for 30 minutes. Add in shredded rotisserie chicken. You can serve like this or you can add in 1/3 cup of heavy cream to take it up a notch- you could also use coconut milk (from the can). When serving you can top with cheese, sour cream, fresh herbs, plaintain chips (what we did) or serve with bread. It is pretty adaptable dish.
